Skillet Steamed Cod Fillet
Cod is an excellent source of selenium, vitamin B12, phosphorus, and protein. These are important nutrients for thyroid health.
1 tablespoon of extra-virgin olive oil
Arugula
¾ cup thinly sliced shallot
1 ¼ pounds cod cut into 4 portions
¼ teaspoon of salt
¼ teaspoon freshly ground pepper
1 cups chicken broth
¼ cup prepared pesto
Lemon wedges
Heat oil in large skillet over medium high heat. Add shallots, cooking until they start to soften.
Sprinkle both sides of cod with pepper, spread the shallots flat on the pan and gently plate cod on top. Increase heat to high and add broth, cover and steam until the fish in cooked through about 4-6 minutes.
