Instant pot Greek chicken Gyros
3 pounds of boneless, skinless chicken thighs
1 large onion
9 garlic cloves
3 tbsp olive oil
1 tablespoon dried oregano
¼ teaspoon allspice
1 tablespoon lemon pepper seasoning
juice from 1 lemon
¼ cup red wine vinegar
¼ cup chicken broth
Pita bread or Naan bread
Lettuce for topping
Feta cheese
Cucumber tomato salad
Tzatziki sauce
Step one: plate chicken, onion, garlic, olive oil, oregano, allspice, lemon pepper seasoning, lemon juice, vinegar, and broth in instant pot.
Step two: Cover and press the manual button and set the timer for 20 minutes. Once the timer beeps let the pressure release naturally for 10-15 minutes and then release the valve for venting.
Step three: Remove the lid and the chicken should be very tender and able to be shredded.
Remove chicken using a slotted spoon and place in pita, top with lettuce, tomato and cucumber salsa, feta cheese
Cucumber and tomato salad:
1 cucumber cut into small pieces
cherry tomatoes halved
Juice with 1 lemon
2 teaspoons olive oil
pepper and salt to taste
-Mix all together
Tzatziki sauce:
· 1 cup plain Greek yogurt (I used full fat yogurt for optimal taste)
· 1 cucumber, peeled, seeded and diced into tiny pieces
· 1 Tbsp dried dill
· 1/4 tsp kosher salt
· 1/2 tsp garlic powder
· Salt and pepper to taste
